I don’t think I can sum it up any better that this. Summer in our house definitely has its own rules, one of which is making an effort to enjoy cooking and eating in the out of doors as often as possible. Dining out on the patio with a high degree of frequency is even on my Bucket List of Summer. Over the course of the past month, I’ve been doing allot of it, and in the process have tried my hand at a number of different meals on the grill. I find that with the use of the little side burner and a grill basket, I can make entire meals without even dirtying my kitchen!
Margarita pizza on the grill is quite possibly most definitely my new favorite summer meal. It’s fast and easy and not very expensive to make. There is virtually no clean-up involved, and a big bonus because this is one fairly healthy dinner. Here’s the how-to.
:: ingredients ::
pre-made crust (I use the whole wheat Boboli variety)
pizza sauce (my absolute favorite is Contadina Pizza Squeeze)
fresh basil and oregano leaves
:: directions ::
1) spread sauce on crust
2) slice tomatoes and place on crust
3) add the fresh mozzarella
4) add the fresh basil and oregano leaves
5) sprinkle with italian seasoning (and love)
6) place onto pre-heated grill
7) keep grill temperature low, and the cover closed until cheese melts and bottom of crust is golden brown
p.s. I recommend adding a fresh salad of romaine lettuce, tomato, onion, black olives, and feta cheese. Drizzle with a light italian vinagrette.
